Television cooking channels hosted by chefs from around the world has led to most people being exposed to exciting new foods and cooking ideas. Even cultures that are renowned for bland cooking have discovered chili relish. The chili itself is a vegetable that has been in use for thousands of years BC. Documented evidence proves it was used in everyday life more than 6000 years ago in Ecuador.

Originally from areas such as the Caribbean and Southern American countries it was discovered by people such as Columbus on their world expeditions. They in turn introduced it to Europe and numerous Asian countries. It features globally in recipe books with each country firmly believing they are the original users. Centuries ago black pepper was a scarce and expensive commodity and peppers were used as supplements.

The making and taste of these relishes rely largely on personal preference. Each culture and family has their own best chili sauce which they fiercely protect. It can be prepared raw, pickled or cooked and is used to add pizzazz to dishes. Either made from fruit or vegetables or a combination of both it is the ideal condiment to turning an ordinary burger or hot dog into a culinary experience.

A typical sauce for meats is an Indian recipe that combines apples and green tomatoes with onions, shallots ginger and garlic. To this they add raisins spices and sugar and cook slowly. The recipe bottles well and can be prepared in large quantities.

It is thought that making relishes evolved as people needed to use the glut of summer produce to ensure fruit and veggies during winter months. The taste explosions range from savory to sweet. It can range from fiery hot to a mild flavor. Relish is never pureed but consists of slivered or diced ingredients.

Many specialty cooks believe that one should use only fresh ingredients to create relishes. Processes to dry herbs, vegetables and spices have evolved to a point where nowadays very little goodness and flavor is lost. Dried ingredients may therefore work just as well. It should be cooked over a mild heat and regularly stirred to avoid burning and sticking to the pan base.

Many families enjoy cooking together and creating family favorites. Combining ingredients and spices to make chili relish may lead to the beginning of a family tradition and a delightful secret recipe. When making relishes people often solely rely on the tasting test to achieve the best results.
