Even cultures that are renowned for bland cooking have discovered chili relish. The chili itself is a vegetable that has been in use for thousands of years BC. Documented evidence proves it was used in everyday life more than 6000 years ago in Ecuador. Originally from areas such as the Caribbean and Southern American countries it was discovered by people such as Columbus on their world expeditions. They in turn introduced it to Europe and numerous Asian countries. It features globally in recipe books with each country firmly believing they are the original users. Centuries ago black pepper was a scarce and expensive commodity and peppers were used as supplements. The making and taste of these relishes rely largely on personal preference.
